By <a href=\"http:\/\/sbseasons.com\/2017\/01\/cocktail-corner-not-vodka-water\/\" target=\"_blank\">Leslie Dinaberg\u00a0<\/a>\u00a0<\/strong><\/p>\n<p>The kitchen is now open at <a href=\"http:\/\/www.figmtnbrew.com\/\" target=\"_blank\">Figueroa Mountain Brewing Company<\/a> (45 Industrial Way, Buellton) and as\u00a0Executive Chef Brian Champlin vowed, this place definitely has, as he\u00a0modestly states, &#8220;under-promised and over-delivered!&#8221;<\/p>\n<p>Boy does Fig Mountain\u00a0ever deliver, both in terms of high quality food that pairs perfectly with beer and in terms of huge portions at small prices as well.<\/p>\n<p>Named \u201cThe Kitchen\u201d at FigMtnBrew, the new restaurant offers a full menu featuring gastropub fare such as creative burgers, fried chicken sandwiches, tacos, salads and more. \u00a0Our group particularly loved the &#8220;21+ and Over Grilled Cheese&#8221; (with three kinds of cheese, avocado, tomato, caramelized onion, apple smoked bacon and Edna&#8217;s Bakery sourdough), Davy Brown Nachos and Chorizo Cheese Fries\u2014but honestly, everything that came out of the kitchen was delicious, especially paired with craft beers like Fig Mtn Mosaic, I Dunkeled in my Pants and and Paradise Rd Pilsner.<\/p>\n<p>\u201cWe wanted to provide top-notch food with great prices,\u201d says General Manager Jeff Hawxhurst, a longtime local chef who started his career as teenager working at the original Habit in Goleta\u00a0and most recently worked with the <a href=\"http:\/\/www.chumashcasino.com\/\" target=\"_blank\">Chumash Casino Resort<\/a> before coming on board with the ever-growing Fig operation. \u00a0\u201cThe casual environment helps us keep prices affordable while offering fresh, farm-to-table cuisine,&#8221; he says.<\/p>\n<p>Champlin also has impressive foodie credentials, most\u00a0recently as co-owner and Executive Chef of Succulent Caf\u00e9 in Solvang. Taking the farm-to-table concept up a notch,\u00a0 \u201cOur brewery actually gives our spent grain to a local farm who then feeds it to their cattle. We are then able to serve the local beef on our menu. It\u2019s a sustainable cycle that ensures we know what\u2019s in our food and where it is coming from.
