{"id":5584,"date":"2013-09-16T15:46:00","date_gmt":"2013-09-16T22:46:00","guid":{"rendered":"http:\/\/lesliedinaberg.com\/wordpress\/?p=5584"},"modified":"2013-09-16T15:46:00","modified_gmt":"2013-09-16T22:46:00","slug":"chefs-counter-at-the-wine-cask-a-culinary-treat","status":"publish","type":"post","link":"https:\/\/lesliedinaberg.com\/wordpress\/?p=5584","title":{"rendered":"Chef&#8217;s Counter at the Wine Cask a Culinary Treat"},"content":{"rendered":"<p>I had my first encounter with the Chef&#8217;s Counter at the <a title=\"The Wine Cask\" href=\"http:\/\/www.winecask.com\/\" target=\"_blank\">Wine Cask<\/a> this week and my tastebuds are still dancing with delight.<\/p>\n<p>For those of you who haven&#8217;t heard, every Monday through Thursday night <a title=\"Chef Brandon Hughes\" href=\"http:\/\/www.winecask.com\/staff.php\" target=\"_blank\">Chef Brandon Hughe<\/a>s is now offering a special Farmer&#8217;s Market fresh tasting menu paired with local wines, for an all inclusive price of $65 per person.<\/p>\n<div id=\"attachment_187\" style=\"width: 310px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/sbseasons.com\/blog\/wp-content\/uploads\/2011\/05\/food56.jpg\"><img aria-describedby=\"caption-attachment-187\" loading=\"lazy\" class=\"size-medium wp-image-187\" alt=\"Courtesy Wine Cask\" src=\"http:\/\/sbseasons.com\/blog\/wp-content\/uploads\/2011\/05\/food56-300x200.jpg\" width=\"300\" height=\"200\" \/><\/a><p id=\"caption-attachment-187\" class=\"wp-caption-text\">Courtesy Wine Cask<\/p><\/div>\n<p>While it is typically a three-course menu, this week&#8217;s menu (still available tonight) included four courses. Sous Chef Nik Ramirez says he and Chef Hughes typically shop the market on Saturday morning and &#8220;duke it out over the week&#8217;s menu.&#8221; Their draw resulted in a victory for us, as we got an extra course on Monday, since &#8220;things looked so good we couldn&#8217;t decide on just three.&#8221;<\/p>\n<p>First up, <a title=\"Rancho San Julian\" href=\"http:\/\/www.ranchosanjulian.com\/\" target=\"_blank\">Rancho San Julian<\/a> Sweetbreads with Green Farm Artichoke Saint Germain and truffle hollandaise, paired with <a title=\"Firestone Walker Brewery\" href=\"http:\/\/www.firestonebeer.com\/home.php\" target=\"_blank\">Firestone Walker Brewery <\/a>&#8220;Honey Blonde Ale.&#8221; Let me preface this by saying that, as much as I love Rancho San Julian (owner <a title=\"Elizabeth Poett of Rancho San Julian\" href=\"http:\/\/video.patagonia.com\/video\/Preoccupations-Elizabeth-Poett\" target=\"_blank\">Elizabeth Poett<\/a> was <em>Seasons&#8217;<\/em> first Farmer&#8217;s Market profile when I took over as Editor in Winter 2010\/11), I would never order sweetbreads if given the choice. However, one timid bite quickly convinced me they were AMAZING! Seriously, this dish deserves a permanent place on the menu. It was one of the most delicious things I&#8217;ve ever had.<\/p>\n<p>Next was Mud Creek Ranch Kumquat Glazed Kurauta Pork Loin with &#8220;The Garden Of &#8230;&#8221; braised Chinese cabbage, sous vide shallots and the <a title=\"Margerum Wines\" href=\"http:\/\/www.margerumwinecompany.com\/\" target=\"_blank\">&#8217;10 Margerum &#8220;Wine Cask&#8221; Sauvignon Blanc<\/a>, which paired perfectly with the pork.<\/p>\n<p>Our third course was Pan Seared Wagyu Strip Steak with Green Farm asparagus gnocchi, Northern California &#8220;Orchard&#8221; morel mushrooms and <a title=\"Earthtrine Farm\" href=\"http:\/\/www.justdoonethinggreen.com\/links\/listing.php?id=1183\" target=\"_blank\">Earthtrine Farms<\/a> Persian mulberry demi-glace, paired with an &#8216;<a title=\"Brander Vineyard\" href=\"http:\/\/www.brander.com\/\" target=\"_blank\">09 Brander Cabernet Sauvignon<\/a>. So tasty. Those Persian mulberries are out of this world. They&#8217;re definitely going on my Farmer&#8217;s Market shopping list.<\/p>\n<p>Finally, for dessert Pastry Chef Rosie Gerard served an Almond Macaroon with chocolate marshmallow, almond nougatine and macerated strawberries, along with a &#8217;10 Margerum &#8220;Alamo Creek&#8221; Grenache, which was the icing on top of a truly fabulous meal. Talk about spoiled; we also got to try a very special Margerum M3 Mourv\u00e8dre available only from the Wine Cask&#8217;s green tap system.
