By Leslie Dinaberg<\/strong><\/h4>\n<p>As <strong>Don Ho<\/strong> sings:<\/p>\n<blockquote><p><em>Tiny bubbles (tiny bubbles)<\/em><br \/>\n<em> In the wine (in the wine)<\/em><br \/>\n<em> Make me happy (make me happy)<\/em><br \/>\n<em> Make me feel fine (make me feel fine)<\/em><\/p>\n<div id=\"attachment_12489\" style=\"width: 266px\" class=\"wp-caption alignright\"><a href=\"http:\/\/sbseasons.com\/blog\/wp-content\/uploads\/2013\/04\/prosecco_slide1.png\"><img aria-describedby=\"caption-attachment-12489\" loading=\"lazy\" class=\"size-full wp-image-12489\" alt=\"OGIO prosecco (courtesy photo)\" src=\"http:\/\/sbseasons.com\/blog\/wp-content\/uploads\/2013\/04\/prosecco_slide1.png\" width=\"256\" height=\"255\" \/><\/a><p id=\"caption-attachment-12489\" class=\"wp-caption-text\">OGIO Prosecco (courtesy photo)<\/p><\/div><\/blockquote>\n<p>Just thinking about bubbles makes me smile: bubble baths, Wonder Bubbles, Bubble Up, Champagne and more recently, <a title=\"Prosecco\" href=\"http:\/\/www.wisegeek.org\/what-is-prosecco.htm#slideshow\" target=\"_blank\">Prosecco<\/a>.<\/p>\n<p>I had my first taste of Prosecco just a few years ago, when a friend brought a bottle of <a title=\"Mionetto Prosecco\" href=\"http:\/\/www.mionettousa.com\/prosecco-il.php\" target=\"_blank\">Mionetto IL Prosecco<\/a> to accompany our sushi at one of the summer concerts at <a title=\"El Capitan Canyon\" href=\"http:\/\/www.elcapitancanyon.com\/\" target=\"_blank\">El Capitan Canyon.<\/a> \u00a0It was delicious, bubbly and tasted good with potato chips too.<\/p>\n<p>Prosecco\u2014which is an Italian sparkling white wine\u2014is growing in popularity by leaps and bounds these days, particularly with the trendsetting 21-something crowd. According to the beverage industry research website, <a title=\"just-drinks.com\" href=\"http:\/\/www.just-drinks.com\/\" target=\"_blank\">just-drinks.com<\/a>, &#8220;Growth in sparkling wine of the non-Champagne variety has been a somewhat unheralded success story of the global wines and spirits market during the past ten years, and the product which typifies the sector&#8217;s progress\u2014and the star performer to boot\u2014is the northern Italian fizz, Prosecco.&#8221;<\/p>\n<p>Unlike many wines, Prosecco is designed to be consumed when it&#8217;s young, and the majority of Prosecco is meant to be light and fresh on the palate. Most of it is produced using the less time-consuming Charmat method (refermentation of the base wine in pressurized tanks, as opposed to bottles) and the taste just keeps getting better.<\/p>\n<p>I recently tried a bottle of <a title=\"OGIO Prosecco DOC,\" href=\"http:\/\/www.ogiowines.com\/us\/prosecco\" target=\"_blank\">OGIO Prosecco DOC,<\/a> which was delicious, light and not overwhelmingly sweet, with fruity notes of peach and green apple. As the company describes it, &#8220;an approachable, friendly and easy-to-drink wine for those who want to have a conversation over a glass of wine, not about a glass of wine!&#8221; That pretty much fits the bill for me.<\/p>\n<p>In addition to the traditional <a title=\"Bellini\" href=\"http:\/\/en.wikipedia.org\/wiki\/Bellini_(cocktail)\" target=\"_blank\">Bellini<\/a>, there are loads of other great mixed drinks you can create with Prosecco.
