When it comes to selecting wines, the future is now.\u00a0San Luis Obispo\u2013based Tastry<\/a> (tastry.com<\/a>) uses\u00a0patent-pending artificial intelligence to\u00a0pair wine drinkers\u2019 taste preferences with\u00a0the bottles they\u2019re most likely to enjoy. \u201cIt\u2019s\u00a0much less about the flavor and much more\u00a0about the flavor matrix,\u201d explains founder\u00a0Katerina Axelsson, who began developing the\u00a0technology while she was a student at Cal Poly\u00a0San Luis Obispo<\/a>.<\/p>\n

Using in-store kiosks at Gelson\u2019s and\u00a0California Fresh markets or the handy\u00a0BottleBird app<\/a>, shoppers take a 10-question\u00a0quiz that uses a blend of machine learning,\u00a0sensory science, and chemistry to match their wine\u00a0palate to the bottles available for purchase. Once they\u00a0select their wine, the app provides recommended food\u00a0pairings.<\/p>\n

In addition to helping consumers make smart\u00a0choices, retailers use the information to optimize their\u00a0product mix, and Tastry also provides science-based\u00a0analysis to winemakers for product development.<\/p>\n
